This is the tofu version of our teriyaki chicken. It's a great meatless option and the teriyaki sauce is the perfect pairing with the crispy tofu. It comes together even quicker, making it perfect weeknight dinner.
This teriyaki tofu is ready in around 20 minutes. It's the perfect balance of salty and sweet, and feel free to top with sriracha or chili flakes to add a nice kick of spice. This teriyaki sauce is a staple in our kitchen, and goes well with just about anything
Servings: 2-3
Ingredients:
1 cup soy sauce
3/4 cup mirin
2/3 cup sake
1/3 cup coconut sugar (cane or maple sugar also works great)
1 package of extra firm tofu (we love Hodo foods brand)
1 Tbsp cornstarch
Instructions:
Unrap your tofu and dry very well with paper towels or a thick dish towel. Once dry, cut into uniform cubes and let sit to ensure all of the moisture is released.
Place a skillet on the stove and pour in the soy sauce, mirin, sake and coconut sugar. Turn on to medium high heat, and heat for 5 minutes or until the sugar dissolves and sauce begins to thicken slightly.
Turn off the heat and pour the liquid into a glass jar or tupperware. There will likely be a lot of extras, so you can save the rest in the fridge to use for later.
Pour your tofu into a bowl and dust with cornstarch. Mix until it reaches all sides.
Place your tofu on an air fryer baking sheet and bake for 8-10 minutes on 425F, or until crispy and light golden brown on the outside.
If you don't have an air fryer, you can always place the tofu on a baking sheet and cook it in the oven on the convection setting at 425F for 10-15 minutes.
Once the tofu is done, add about 1/3 cup of the teriyaki sauce to your skillet and heat on medium. Once the sauce begins to thicken further, toss in your tofu and stir until coated nicely with a thick layer of sauce. You can always add more or less teriyaki depending on how you like it.
Serve immediately with rice and veggies, and top with a little extra teriyaki. The tofu will last in the fridge for at least 5 days, and the remaining teriyaki sauce will last for weeks, and its a great staple to have on hand.
