The homemade croutons and dressing make this salad taste so fresh and delicious. This is the perfect lunch salad, packed with protein and healthy fats to keep you full throughout the day. It also is amazing as an appetizer or a side for dinner.
This salad is so satiating and delicious. Bonus, you can prep the chicken, croutons, and dressing the day before, so when it comes time to eat, all you have to do is assemble in just a few minutes.
Ingredients:
Salad:
1 large head of romaine lettuce, rinsed and chopped
4 slices of sourdough bread (any variety will work)
1 large chicken breast
1 tsp salt
1/2 tsp garlic powder
Parmesan cheese (garnish)
Caesar Dressing:
1/2 cup mayo (We like Primal Kitchen or Chosen Foods brand-- or even better, make your own!)
1/2 cup grated parmesan (freshly grated is best)
1/4 cup dijon mustard
Juice of 1/2 of a lemon
1 tsp anchovy paste
Salt and pepper, to taste
Instructions:
First, preaheat your oven to 375F. In the meantime, pat dry your chicken breast. Heat a skillet at medium-high and pour in olive oil. Add your chicken breast and sear for 5-8 minutes on each side, or until browned and cooked through. Place on a cutting board to cool.
Cut your bread slices into small squares. Toss with olive oil, salt and garlic powder. Add to a large baking sheet and bake in the oven for 10-15 minutes. Check on them every 5 minutes or so because they crisp up quickly.
Then, make the dressing. Add the mayo, parm, dijon, lemon, and anchovy to a large jar and shake well to combine. Taste and season with salt and pepper. Set aside.
Once the chicken has cooled, take 2 forks and shred your chicken.
To a large bowl, add your chopped romaine, shredded chicken, homemade croutons and parm (optional). Pour some of the dressing over the top and toss until the dressing is mixed throughout. Always add in less dressing, you can add more if necessary. The extra dressing will last in the fridge for 5 days at least. Enjoy!
