This is a healthy and delicious twist on your average takeout. It takes under 30 minutes and is packed with veggies, fiber, and protein.
There are tons of ways to customize this fried rice. You can easily substitute the protein for chicken, tofu, or eggs. Almost any veggie works well here too. This recipe works best with day-old rice, so if you have leftover rice it's perfect for this recipe.
Ingredients
1 1/2 cups brown rice (white is great too)
1 cup diced mushrooms
1/2 cup diced carrots
1/2 cup frozen peas
1 cup cooked crab meat
4 scallions, diced
4 cloves garlic, minced
Directions
Heat a wok or large saucepan on medium-high. Once hot, add in a generous coating of olive oil or coconut oil to coat the pan.
Add in the carrots, mushrooms, and garlic. Cook for 5 minutes, or until veggies begin to soften.
Add in the rice, frozen peas and crab meat and cook for another 3-5 minutes.
Add in half of the scallions and stir throughout. Cook for another 2 minutes and serve. Top with scallions. Leftovers will last in the fridge for at least 5 days.
