Ingredients:
1 stick of butter (1/4 cup)
4oz semisweet chocolate
3/4 cup sugar
3 eggs
1/2 cup cocoa powder
1 tsp vanilla
1/4 tsp salt
Powdered sugar (optional)
Instructions:
Preheat the oven to 375F.
Set up a double boiler by pouring about an inch of water into a saucepan and bringing it to a boil. Once boiling turn the heat down to simmer and place a large stainless steel or heat-safe glass bowl on top.
Immediately add in the butter and chocolate. Stir constantly until melted and combined.
Carefully the bowl off the heat and let cool for a minute or so.
Whisk in the sugar, then eggs, then the cocoa powder
Grease and wax-paper line a 9-inch round pan. Pour in the batter.
Bake for 25 minutes, or until a toothpick comes out clean.
Once cooled, trace around the edges with a knife to ensure the sides are not sticking. Place a large, flat dish on top of the pan and flip in one swift motion. Bang the bottom of the pan with a spoon to ensure the cake has come out successfully.
Top with powdered sugar, and serve. Will last for at least 5 days on your kitchen counter, or longer in the fridge.
