I love making these in batches and storing them in the fridge or freezer. You can pop them in the toaster for an even quicker breakfast or snack.
Quick & Easy Blender Pancakes (Vegan & Gluten Free!)
Yield: 6 Pancakes
Ingredients
1 overripe banana
1 cup rolled oats
2/3 cup almond milk (any milk will do, or water even)
1 Tbsp maple syrup
1 tsp baking powder
1 tsp vanilla extract
Pinch of salt
Optional add-ins: blueberries, chocolate chips, sliced banana
To Serve:
Real maple syrup
Almond butter or peanut butter
Berries
Coconut yogurt
Directions
Add the oats, banana, milk, maple syrup, baking powder, vanilla extract, and salt to a high speed blender.
Blend on high until combined and becomes a batter consistency, approx 15-30 seconds.
Let the batter rest for 1 minute. Meanwhile, heat a large skillet on medium, high. Add your oil of choice and let heat.
Add about 1/4 cup of batter, and repeat depending on how many your skillet can fit. Immediately place your add-ins of choice on top of the batter (blueberries, chocolate chips, etc.)
When the pancakes begin to bubble throughout, flip them. Let them cook on the other side for about 1 minute.
Serve immediately, and add your favorite toppings (maple syrup, nut butters, berries, coconut yogurt, etc.)
