The Best Banana Bread

This is the perfect use for those overripe bananas sitting on your counter.




This banana bread is the biggest crowd pleaser, and never lasts more than a day. Feel free to add in chocolate chips or walnuts as well.


Servings: 1 loaf


Ingredients:

  • 4 overripe bananas

  • 1 1/2 cups all purpose flour (I love Jovial brand)

  • 3/4 cups coconut sugar

  • 1/2 cup olive oil or coconut oil

  • 1 egg

  • 1 tsp vanilla bean paste or vanilla extract

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1/2 tsp salt



Directions:

  1. Preheat the oven to 350F.

  2. In a large bowl, mash 4 bananas. Add in the coconut sugar and beat well.

  3. Add in 1 egg and your oil of choice, and whisk until combined.

  4. In a separate bowl, mix the flour, baking soda, cinnamon, and salt.

  5. Add your dry ingredients into the wet and mix until combined. Mix in optional add-ins like chocolate chips or walnuts now as well.

  6. Pour the batter into a parchment lined loaf pan.

  7. Bake at 350F for 50-60 minutes or until a toothpick comes out clean.

  8. Store in an airtight container for up to a week.
