The Best Veggie Sandwich

This sandwich is so flavorful and comes together in just a few minutes. It's the perfect hearty and comforting lunch.



You can completely customize this sandwich with any veggies you have on hand -- it never disappoints!


Servings: 1 sandwich


Ingredients:

  • 2 slices of sourdough bread (any works)

  • 4 pieces of quartered artichoke hearts

  • 2 slices of tomato

  • 1 Tsbp olive paté

  • A handful of arugula

  • 1/2 an avocado, mashed

  • 2 Tbsp hummus

  • 1 Tbsp olive oil


To Serve:

  • Olive oil & balsamic vinegar


Instructions:

  1. Lay out your two slices of sourdough bread. Spread your olive paté on one slice and the hummus on the other slice.

  2. On top of the hummus, add your mashed avocado, then tomato, arugula, and artichoke hearts.

  3. Heat a skillet on medium-high. Add a nice glug of olive oil to the pan, and once heated place your sandwich in the skillet.

  4. Toast your bread until nice and crispy golden brown. Carefully, use a spatula to flip the sandwich and toast the other side.

  5. Slice your sandwich and half and enjoy immediately. Dip in olive oil & balsamic vinegar for even more flavor.
